First U.S. Outpost for International, Chef-Driven Concept Opens in Scottsdale
Roka Akor Brings Hip Robatayaki Cuisine to Scottsdale, Reflective of London's Famed Roka
SCOTTSDALE, Ariz. (February 18, 2008) -- Roka, an award-winning London-based restaurant outfit featuring contemporary Robatayaki cuisine, opens its first U.S. location in Scottsdale, Ariz. today under the name of Roka Akor.
The 7,500-square-foot Roka Akor, located on Scottsdale Road within the Artesia community, reflects London's celebrity hot spot, Roka, in its high design and fashionable Japanese cuisine, while featuring both menu and design variations of its own. Designed by Noriyoshi Muramatsu and award-winning Tokyo design firm Super Potato, the restaurant will feature nature-inspired elements such as granite, stone, rammed earth walls, maple wood tables and Washi rice paper lamps. The Robata grill and bar counters are both made from reclaimed wood with natural, hand-hewn edges.
A multi-tied Robata grill fueled by an open charcoal-fire is the centerpiece of Roka Akor's dining room and
provides inspiration for many of the dishes on its menu. The Robata technique was first developed by
Japanese fisherman who cooked their daily catch over open charcoal flames, utilizing their oars as serving
platters.
The menu includes small plates, warm bites and entrees from the grill, such as Maguro no tataki, which is
a tuna tataki salad with apple mustard dressing; Ebi no tempura, which are rock shrimp with wasabi pea
seasoning and fresh lime; and Kankoku fu kohitsuji, which are lamb cutlets with korean spices. A variety of
salads, sashimi, sushi and desserts are also offered. |
